Grilled Salmon with Spicy Maple

What do you need:

  • 4 salmon fillets

  • 1 green onion, thinly sliced

  • 2 garlic cloves, minced

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons reduced sodium soy sauce

  • 1 tablespoon maple syrup

  • 1 tablespoon olive oil

  • 1 teaspoon crushed red pepper flakes

  • 1 teaspoon ground ginger

  • 1/2 teaspoon sesame oil

  • 1/4 teaspoon salt

Combine onion, garlic, balsamic vinegar, soy sauce, maple syrup, olive oil, red pepper flakes, ground ginger, sesame oil, and salt in a bowl. Place salmon fillets in a large resealable plastic bag, then marinate over fish. Seal and refrigerate for at least 30 minutes. When ready, remove the fish from the bag and discard the marinade.   • 8 tilapia fillets

  • 2 green onions, chopped

  • 2 cups cubed fresh pineapple

  • 2 tablespoons plus 4 teaspoons fresh lemon juice

  • 1 tablespoon canola oil

  • 1/4 teaspoon plus 1/8 teaspoon salt

Combine onions, pineapple, green bell pepper, cilantro, 4 teaspoons lime juice, 1/8 teaspoon salt, and cayenne pepper in a bowl. Cover and refrigerate until ready to serve. In another bowl, mix 2 tablespoons of lemon juice and canola oil then drizzle over tilapia fillets. Season with 1/4 teaspoon salt and pepper. Cook on preheated grill, covered, 2 to 3 minutes per side or until fish is cooked through. Top with pineapple mixture to serve.

Grilled Halibut with Lemon and Ginger

What do you need:

  • 4 halibut fillets

  • 2 tablespoons sesame oil

  • 2 tablespoons soy sauce

  • 4 teaspoons of fresh lemon juice

  • 1 teaspoon minced fresh ginger root

  • Salt and pepper to taste

Brush halibut fillets with lemon juice, sprinkle with minced ginger, and season with salt and pepper.
